I wanted to ask. Can these be made gluten free? I got the 1 to 1 gluten free bob's red mill baking flour. Made these exactly like last time, the dough was so dry and I had to add a lot of water... They're currently in the oven, but I do not think they'll turn out well.

I will be making these for an out of town Christmas dinner. Do these travel well if I make them a day ahead? Not sure how to store them...break apart or just cover the 9x13 in saran wrap? Any tips appreciated!

These rolls are perfect! I have chickens and ducks. I used three xtra large duck eggs. I made them once with all purpose flour and they turned out so fluffy and good! I am making them right now, and am using bread flour this time. I will report back once they come out the oven, if they're better with all purpose or bread flour. This is my go to recipe for dinner rolls from now on! Thanks for posting your recipe :)

I was getting ready to smack my friends hand if he took any more before the Thanksgiving meal was fully ready! They were soft and fluffy and everyone was impressed. I accidentally left the dough in the machine after the machine dough and so it finished rising in there. I just took it out, used a rolling pin on a four surface and then used a round cookie cutter that I have to shape them. I brushed the top according to the instructions and tossed them in oven. Serendipity! It was a happy accident leaving the dough in machine. I can't wait to have another reason to make these.

I love this recipe. I have tried a few others but this one has turned out the best and it's so easy to do in the bread machine. I used all-purpose flour instead of bread flour and it still turned out great. These are nice a fluffy and very tasty. They don't last long at my house. Thanks Nikki.

these were good. they were my first attempt at rolls, so they weren't the prettiest, lol, but my dh loved them. i loved the touch of sweetness that the sugar in the egg wash gave. also in the dough i used honey instead of sugar. thanks!

FAQs

Why are my homemade dinner rolls hard? ›

Too much flour, or not the right kind, could be to blame. Dough made only from flour with a high or even average amount of protein (like bread flour or all-purpose flour) can become tough from overmixing. Protein gives bread structure in the form of gluten—the more you mix and move the dough, the more gluten you get.

What order should I put the ingredients in my bread machine? ›

Adding Ingredients to the Bread Machine

Manufacturers usually recommend adding the liquids first, followed by dry ingredients, with the yeast going in last. This keeps the yeast away from the liquid ingredients until kneading begins.

Why did my dinner rolls come out heavy? ›

If your dinner rolls aren't fluffy it could be because of one of two reasons. Either, you added too much flour or you possibly used all bread flour. Alternately, not giving your dinner rolls enough time to proof and get puffy before baking could yield dense rolls.

What ingredient makes bread light and fluffy? ›

Adding sugar weakens the gluten structure, absorbs water, and eventually makes the bread lighter and softer. As a result, sugar improves the bread's taste, structure and texture. Yeast also eats up sugar to produce carbon dioxide, which raises the dough and makes bread fluffy.

Why are my rolls dense and not fluffy? ›

If your bread is under proofed, it means there's not enough air in the dough. The yeast/sourdough in your dough has not had an adequate amount of time to produce the carbon dioxide that creates a rise in your bread. This results in bread that is dense and less airy.

How do I get my rolls to be fluffy? ›

Don't over flour the dough. Knead for 5-6 minutes until the dough is soft and smooth. Let the dough rise in a warm spot until doubled, about an hour or so. (I usually let the dough rise right in the mixing bowl, but you can transfer to a lightly greased bowl and cover.)

Should I butter my rolls before baking? ›

Butter basting: Rolls can be brushed with butter before, during, or after baking. While it doesn't brown the surface as much as egg wash will, it does promote browning and adds a lot of flavor.

Can I open my bread machine while baking? ›

The cycle could be too short for the recipe causing it to be baked prematurely. If that's not the case, maybe too much heat may have escaped from the bread machine as it was baking. You should never open the cover of your machine while it is on the bake cycle.

Should I proof yeast before adding to bread machine? ›

A: Active dry yeast should be proofed prior to use. Proofing is when you dissolve the yeast into some water along with some sugar to wake up the yeast. It is not advised to add directly to the flour in a bread machine as you will not get optimal yeast activation in this dry setting.

Do you melt butter before putting it in a bread machine? ›

A bread recipe usually features some form of fat, be that softened or melted butter, vegetable oil, or olive oil. These fats can enhance your fresh bread's taste and texture. However, fats should only be added to the bread machine once they've reached room temperature.

Can you over knead dinner rolls? ›

It's vital to stop mixing at the first signs of over-kneading, as a fully over-kneaded dough cannot be fixed. Over-kneaded dough will also tear more quickly, as the gluten strands in the dough have become so tight they easily break under pressure.

Why aren t my rolls light and fluffy? ›

Rolls that are not light and fluffy can be the result of using too much flour (not measuring the flour correctly, as we mention above), or not using the type of flour your recipe calls for. Another reason for dense tough rolls is overmixing, which will produce too much gluten.

Can dinner rolls rise too long? ›

If the dough has risen too long, it's going to feel fragile and might even collapse as you poke it,” says Maggie. If this is the case, there's a chance you can save your dough by giving it a quick re-shape.

Why are my bread rolls not soft? ›

You're probably not developing the gluten enough. Could also be too low hydration, or maybe under-proofed. Maybe your yeast is old… A simple switch might be using all purpose flour instead of bread flour.

Why are my dinner rolls flat? ›

Yeast – Before you start baking, check to make sure that your yeast hasn't expired. If it's not fresh, the rolls won't rise, and they'll be dense and flat instead of soft and fluffy.

How to make rolls rise higher? ›

On lowest oven temperature to preheat: Turn the oven to the lowest oven temperature for about 2 minutes. Then turn off the oven, open the door and add the dough (in a covered glass bowl). This will be a cozy spot for your dough to rise. Don't forget to turn off the oven!
