  • 1 tablespoon olive oil
  • 1 14 lbs pork tenderloin, cut into bite sized pieces
  • 1 12 lbs sweet potatoes, peeled and cubed
  • 2 poblano peppers, seeded and diced
  • 1 cup chopped onion
  • 1 tablespoon chopped garlic
  • 1 teaspoon cumin
  • 12 teaspoon cinnamon
  • 1 (14 1/2 ounce) can fat free chicken broth
  • 12 cup water
  • 1 cup frozen corn
  • 1 12 cups salsa, a chipotle version suggested
  • cilantro (to garnish)

  • Heat 2 teaspoons of the oil in a large saucepan over medium heat. Add the cubed tenderloin and cook for 7 minutes, turning so all sides are browned and the pork is cooked. Remove from pan and set aside.
  • Add the remaining teaspoon of oil to the pan along with the onions, peppers and sweet potatoes. Cover and cook for three minutes until the vegetables begin to soften. Add the sweet potatoes, continuing to cook another 2 to 3 minutes.
  • Add the garlic, cumin and cinnamon, stirring so that the spices are well mixed into the vegetables. There should be a nice aroma at this point. Stir in the water and broth and bring to a boil. Lower to a simmer and add in the corn. Cook covered for 5 minutes.
  • Add in the salsa and the cooked pork. Cook until heated through. If you are using salsa from the fridge, I would suggest adding it a minute before the meat so that it cn heat up without leaving the tender meat tough.
  • Garnish with cilantro and serve with warm tortillas or tortilla chips.

  1. Excellent one dish meal. I would have given it 5 stars except the cooking times are way off. The pork needs more than 7 minutes, unless you want trichinosis. And the sweet potatoes take at least 20 minutes (more like 30 minutes) to reach even al dente. I added extra hot peppers so it had great heat. The cumin adds good flavor. I skipped the cinnamon as I am not a fan. I also added a few beans to add fiber and protein. My husband says it is definitely a "make-again" recipe. Maybe even for deer camp or dinner company.

  2. This turned out AMAZING. As others suggested, I added carrots, beans and a can of diced tomatoes with chiles. Delicious.

  3. This was very good. The cinnamon really makes this dish interesting. I didn't have any poblanos so used about 1.5 chipotles in adobo minced finely. I think next time I will use a bit more. Like others I also added a can of black beans. The directions are a little strange (add in the sweet potatoes in 2 different places, there is no way my sweet potatoes could cook in that little time) but that was a minor issue. Thanks for posting. I'll make this often.

  4. I tried this recipe based on good reviews and healthy ingredients, but was skeptical. It turned out that it was delicious and enjoyed by the whole family including the kids! I made the recipe as written. I love having a new way to prepare pork tenderloin.

  5. This really to the chill out of a winter day. I added 32 oz. of chicken broth, 2 bay leaves, carrots & peas and made GK recipe for salsa. Gave some to the neighbor, and it was a bit hit!

  1. Delicious! Our local supermarket didn't have any chipotle salsa in stock (we live in very rural Maine so not altogether surprising), so I added a couple of chipotles in adobo to a medium salsa instead. Made it pretty fiery but really tasty! Will definitely be making this again.
